The wedding is over, the reception is done. All the guests have gone home with their bags of your wedding cake to put under their pillows for sweet dreams of their own true love. As you are leaving, the caterer comes rushing over, and hands you a cake box. You peek inside, and there you find the top tier of your wedding cake.

The tradition is that you take the top of your wedding cake home with you, and you store it in your freezer until your one year anniversary, when you pull it out, thaw it, and enjoy it as part of your first anniversary dinner. But do you want to eat cake that’s a year old? What will it taste like? Is it even safe?

Let’s start with the fact that in recent memory, there have been no reported deaths by year old wedding cake. While it does push the limit of what an acceptable period of time to save frozen food is, if you get the cake home, wrap it right away both in plastic and foil, then store in a freezer bag, you’ll be fine.

The best results are going to be with pound cake. It’s a firm, dense cake that does well in the freezer. The kinds of cake that fare the worst are cakes with some kind of filling. Italian cream cake, for example, with its luscious layers of decadent filling, is going to thaw out on the mushy side and won’t taste very good.

The best thing to do with the top tier of wedding cake is to eat it as soon as you can. If you are traveling somewhere the night of your wedding, take it with you, and have your own private celebration when you arrive at your hotel. Bring a bottle of champagne with you, or order some from room service, and toast each other.

You could give the cake to your parents to take home and freeze until you come back from your honeymoon. Cream cakes or filled cakes still won’t thaw well, but you’ll do better taste wise with other types of cakes a week after the wedding than you would a year after the wedding.

What to do on your first anniversary? Go back to the bakery where your cake was made and ask them to create a top tier replica for you. The romance of the celebration will be just as sweet, but it will be much fresher to boot!
